Pretty In Pink Breakfast

Brunch in bed? Why not these delicious pretty pancakes will make the start of your day. This is a quick and thoughtful way to surprise babe with breakfast as well. Sometimes men need a little love too.

Ingredients

Pancake Batter (makes 7 cups):

  • 6 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt

Pancakes (makes 6 pancakes):

  • 1 cup pancake batter
  • 3/4 cup milk, or 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter, plus more for the pan
  • Two drops red food coloring
  • Blueberries (3 or 4 per pancake, add in while cooking)
  • Walnuts
  • Powdered sugar (topping)

Directions:

Put 1 cup of pancake batter into a mixing bowl. In a separate bowl, combine milk, egg, and vanilla extract. Beat well Continue whisking the milk while you pour in the melted butter. Pour the egg mixture in the pancake batter and blend to your liking.

Get you a large non-stick pan and set it on medium heat. Add a tablespoon of butter and once the pan is hot the butter will melt, then and only then will you add your batter in (make your cakes the size you want) I made mines medium size.

Once you have your pancake batter cooking add a few blueberries 3 or 4 is fine. (Use whatever fruit you like)

When the bubbles form, flip your pancakes and let the other side cook a minute or two. I usually cook two pancakes at a time, you want the flipping room.

Repeat until all your pancakes are done.

Once pancakes are finished cooking top them with blueberries, strawberries, walnuts, and powdered sugar, that’s how I did mines.

* We had bacon and eggs as well I just didn’t add them in my picture.

Rustic Garlic Shrimp

Happy Wednesday Today I’m sharing my Rustic Garlic Shrimp Recipe. Not only is it good, it’s just in time for Valentine’s Day with the heart-shaped pasta noodles. So just in case your looking for something to make on love -day I got you covered.

Ingredients

1 bag of colossal shrimp peeled, deveined and tails removed

1/4 teaspoon salt

2 tablespoons Rosemary

2 tablespoons Basil

1/8 teaspoon black pepper

1 tablespoon canola oil

1 tablespoon unsalted butter

1 bag of asparagus

1/2 a bag of sun-dried tomatoes

1/2 cup chopped white onion

3 to 4 garlic cloves minced

4 tablespoons unsalted butter

1 cup chicken or vegetable stock

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 bag of heart-shaped pasta

Instructions

Cook pasta, drain and keep warm

In a large skillet, heat up oil and butter. Add shrimp to skillet, season with salt and pepper and cook over medium heat, 2 to 3 minutes per side, until the shrimp are pink. Remove shrimp onto a plate and set aside.

Add 3 tablespoons of butter to the skillet and melt. Add in your garlic and onion and saute a few moments until onions are halfway done.

Add in asparagus and saute until soft.

Add in sundries tomatoes sauté with asparagus a few seconds.

Add in basil and rosemary (prepackaged)

Add chicken stock and bring mixture to simmer. Add shrimp back to skillet and simmer one minute.

Add the last tablespoons of butter to the dish, stir in until melted. Remove skillet from heat.

Season dish with salt and pepper. Toss in cooked noodles. Garnish with chopped parsley and serve.

Tips

You can add Parmesan cheese on top (I didn’t have any so I made it work.)

Heart-shaped pasta you can find at Aldi grocery store. (Or use what you have on hand.)

You can sprinkle a lil bit of lemon juice to give it a pop. (Just a little)

Valentine’s Day Charcuterie Board.

Valentine’s Day is right around the corner and I don’t know about you but for the last two years, I have been at home on Loveday.

All the restaurants are super busy and we don’t want to wait long hours to eat. If your staying home like me and want to whip up a simple romantic snack for babe this charcuterie board is just for you.

Ingredients:

Cherrys

Chocolate Covered Pretzels

Mini Marshmallows

Haribo Gummies

Heart-shaped lollipops

Candy hearts

Graham Crackers

Strawberry Preserves

Decorations:

Charcuterie board or tray

Pink table cloth

Mini Spoon

Ramekin

Rose petals

Directions

1. Start by laying your table cloth out and spreading your rose petals

2. Lay your charcuterie board in the center of the table.

3. Take ramekin and place on board first it helps to assembly the rest of the ingredients easier.

4. Add your strawberry preserves to the ramekin and top it with the mini spoon then place it on the board.

5. Fill in the remainder of the board, I started with the chocolate covered pretzels followed by the mini marshmallows, cherries, graham crackers, gummy bears and then I filled in the remaining empty space with the heart-shaped candies.

6. You are not obligated to use the ingredients I used you can add anything you like.

Quick Tips

If you use anything spicy or unknown please label so your guests will know what they are eating.

All my ingredients came from Aldi and dollar tree for a total of ten dollars.

Grab some bubbly, music and candles and you have yourself a quick and affordable Valentine date.

Blueberry Lemonade (Monte’s Style)

Ingredients: 3 Myer lemons

1 Cup blueberry simple syrup

3 cups white sugar

4 and a half 1/2 Cups water

1/2 a cup of blueberries

Directions:

Grab your pitcher and add water

Next slice up 2 lemons in triangles and one lemon in 2 inch round slices.

Squeeze all your triangle lemons into your water and throw those away.

Add white sugar & stir

Add blueberry simple syrup & stir

Squeeze all your circle lemons in your water and keep them inside the pitcher.

Add 1/2 of cup of blueberries & stir

Sample a cup and pop it in the fridge the colder the better.

Fish Tacos w/ Watermelon Salsa

Salsa Ingredients:

4 cups red seedless watermelon cut into bite-sized pieces,

1/3 cup red onion, minced

1/2 cup fresh cilantro, chopped

2 freshly squeezed limes (roll on counter first to soften for juicing)

Zest of 1 lime

1/2 teaspoon of Himalayan salt

4 drizzles of honey

Optional: 1 white corn (so good)

Optional: 2 mango (for extra color)

Optional: 3 teaspoons banana peppers minced

Mix all ingredients in a bowl and let refrigerate until time to add to the fish.

Fish Tacos Ingredients:

(I didn’t really measure the seasonings I just sprinkled enough to my liking.)

2 bags of flounder filets

Old bay

Garlic powder

Onion powder

Olive oil

Butter

pepper

Parmesan cheese

Tabasco sauce

White corn street tortillas

Directions:

1. Line a large baking sheet with parchment paper . In a dish, stir together seasonings: old bay, garlic powder, onion powder and evenly sprinkle the seasoning mix over both sides of flounder.

2. Drizzle fish with olive oil and top each piece with a dot of butter. Bake at 375˚F for 20-25 min. If you want it to get a little browned around the edges, you can broil for 3-5 minutes at the end.

3. To serve the tacos, quickly toast the corn tortillas on a large dry skillet over medium heat.

4. To assemble: start with the fish then add watermelon salsa finishing off with a generous sprinkle of Parmesan cheese and finally green Tabasco sauce!

Use What You Got Chicken and Shrimp.

Hey y’all! A few weeks ago I made a quick chicken and shrimp dish and the reason for its title is just that. I used what I had in my fridge and it came out so good.

Ingredients:

1 half bag pre-cooked chicken bites 

1 bag medium shrimp

1/2 bowl of cut fresh pineapples

2 bags of Jasmine Thai rice 

Parsley (for garnish)

Directions:

First, you want to boil the water for the rice and get that going

Next, Peel thawed shrimp

3. Put your veggies on and cook them halfway I didn’t put veggies in the ingredients because my kids didn’t want any but I do that step first. 

4. Add chicken bites  

5. Once the chicken is halfway cooked add in the shrimp and pineapple, juice included and simmer down until shrimp are pink 

6. When the meat is fully done add one packet of Polynesian sauce and mambo sauce I got mines from Walmart.

7. Turn off pan and let the sauce thicken up, serve with rice. I also sprinkle parsley and more mambo sauce over it when done but that’s optional.
